Here’s your go-to recipe for Crock Pot Chicken Thighs — juicy, flavorful, fall-apart tender, and perfect for busy weeknights or cozy Sunday dinners!


🍗 Crock Pot Chicken Thighs

🕒 Prep Time: 10 min | Cook Time: 4–6 hrs (LOW) or 2.5–3.5 hrs (HIGH)

📝 Ingredients:

  • 6 bone-in, skin-on chicken thighs (or boneless if preferred)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ cup chicken broth
  • 2 tbsp butter, cut into pieces
  • Optional: 1 tbsp lemon juice or a few sprigs of fresh herbs for extra flavor

🔥 Directions:

  1. Season chicken:
    In a small bowl, mix paprika, garlic powder, onion powder, salt, pepper, and thyme. Rub the spice mix all over the chicken thighs.
  2. Optional sear for crispiness:
    Heat olive oil in a skillet over medium-high. Sear chicken (skin-side down) for 2–3 minutes until browned.
  3. Layer in crock pot:
    Place chicken thighs in the slow cooker. Add chicken broth and dot with butter.
  4. Cook:
    • On LOW for 4–6 hours
    • Or on HIGH for 2.5–3.5 hours
      Until chicken is tender and reaches 165°F internal temp.
  5. Serve:
    Spoon some of the juices over the top and serve with your favorite sides.

✅ Tips & Notes:

  • Want crispy skin? Broil the thighs for 2–3 minutes after slow cooking.
  • Swap spices based on your vibe — Cajun, Italian, lemon pepper, etc.
  • Use the leftover juices as a quick gravy or sauce for rice or mashed potatoes!

  • Fridge: Store in airtight container up to 4 days
  • Freeze: Cool completely, freeze for up to 3 months
