- 1½ lbs potatoes, diced (Yukon gold or red)
- 1 lb boneless, skinless chicken breast, cubed
- 1 packet (1 oz) ranch seasoning mix
- 1½ cups shredded cheddar cheese
- ½ cup sour cream
- ½ cup mayonnaise
- ½ teaspoon garlic powder
- Salt & pepper to taste
- 6 strips bacon, cooked and crumbled
- 2 tablespoons olive oil
- Optional garnish: green onions or chives, chopped

- Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
- In a large bowl, toss potatoes with olive oil, half the ranch seasoning, garlic powder, salt, and pepper. Spread evenly in the baking dish and bake for 20 minutes.
- While the potatoes bake, in the same bowl, combine chicken, remaining ranch seasoning, sour cream, mayonnaise, and 1 cup cheese.
- Remove the potatoes from the oven. Add the chicken mixture on top, stir to combine, and smooth it out evenly.
