Hereโ€™s a delicious, low-carb alternative to traditional pizza dough โ€” Simply the Best Cauliflower Pizza Crust! Itโ€™s crispy, flavorful, and holds together beautifully.

๐Ÿ“ Ingredients:

  • 1 medium head cauliflower (about 4 cups riced)
  • 1 large egg
  • ยฝ cup shredded mozzarella cheese
  • ยผ cup grated Parmesan cheese
  • ยฝ teaspoon Italian seasoning
  • ยผ teaspoon garlic powder
  • Salt & pepper, to taste

  1. Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper and lightly grease.
  2. Rice the cauliflower:
    • Cut into florets and pulse in a food processor until it resembles rice.
    • Alternatively, use store-bought riced cauliflower (fresh or frozen, thawed).
  3. Steam & drain:
    • Microwave riced cauliflower for 4โ€“5 minutes or steam until tender.
    • Let cool, then squeeze out all moisture using a clean kitchen towel or cheesecloth โ€” this is key for a crisp crust!
  4. Mix the dough:
    • In a bowl, combine drained cauliflower, egg, cheeses, and seasonings.
    • Mix well until a dough forms.
  5. Shape & bake:
    • Press dough onto prepared baking sheet in a round or rectangular shape (~ยผ inch thick).
    • Bake for 20โ€“25 minutes until golden and firm.
  6. Add toppings & bake again:
    • Add your favorite sauce, cheese, and toppings.
    • Return to oven for another 5โ€“10 minutes until cheese melts.

  • The drier the cauliflower, the crispier the crust!
  • For a firmer texture, bake the crust directly on a preheated pizza stone.
  • You can make it ahead and freeze the baked crust for quick meals.

โ„๏ธ How to Use Frozen Cauliflower for Pizza Crust:

  1. Thaw Completely
    Place frozen cauliflower (riced or florets) in a colander and let it thaw at room temperature or microwave it until soft.
  2. Drain and Squeeze Out Moisture
    Wrap the cauliflower in a clean kitchen towel or cheesecloth and squeeze thoroughly to remove as much liquid as possible. This is critical for a crispy crust.
  3. Proceed with the Recipe
    Once thawed and dried, mix with the rest of your crust ingredients as usual.

Option 2: Freeze After Baking the Crust

  1. Fully bake the plain crust until golden and crisp.
  2. Cool completely, then wrap in parchment paper and foil, or store in a zip-top freezer bag.
  3. Freeze for up to 2 months.
  4. To use: thaw in the fridge or bake directly from frozen for a few minutes before adding toppings.
