  • 1 medium head cauliflower (about 4 cups riced)
  • 1 large egg
  • Β½ cup shredded mozzarella cheese
  • ΒΌ cup grated Parmesan cheese

  • Salt & pepper, to taste

  1. Preheat oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper and lightly grease.
  2. Rice the cauliflower:
    • Cut into florets and pulse in a food processor until it resembles rice.

  3. Steam & drain:
    • Microwave riced cauliflower for 4–5 minutes or steam until tender.

  4. Mix the dough:
