🍔 Cheeseburger Meatloaf (Keto / Low Carb)

Here’s a hearty and flavorful Cheeseburger Meatloaf that’s keto-friendly and low in carbs — packed with cheesy, meaty goodness and all your favorite burger flavors, minus the bun!


🍔 Cheeseburger Meatloaf (Keto / Low Carb)

Prep Time: 10 minutes
Cook Time: 45–50 minutes
Total Time: ~1 hour
Servings: 6


📝 Ingredients:

  • 1½ lbs ground beef
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ¼ cup unsweetened ketchup (or sugar-free)
  • 2 tablespoons yellow mustard
  • ¼ cup chopped dill pickles
  • ½ cup almond flour
  • ¼ cup chopped onion
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Optional topping:

  • ¼ cup sugar-free ketchup
  • ½ cup shredded cheese for the last 10 minutes of baking

👩‍🍳 Instructions:

  1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease.
  2. In a large bowl, combine ground beef, eggs, cheese, almond flour, ketchup, mustard, pickles, onion, and seasonings.
  3. Mix just until combined — don’t overwork the meat.
  4. Transfer mixture to loaf pan and shape evenly.
    Optional: Top with a thin layer of sugar-free ketchup.
  5. Bake for 40–45 minutes, or until internal temp reaches 160°F (71°C).
  6. Add extra cheese on top in the last 5–10 minutes if desired. Let rest 5 minutes before slicing.

✅ Tips:

  • Want it spicier? Add a dash of hot sauce or chopped jalapeños.
  • Great with a side of cauliflower mash or zucchini fries.
  • You can shape it free-form on a sheet pan for crispier edges.

🧊 Storage:

  • Refrigerate leftovers up to 4 days.
  • Freeze slices for up to 2 months — reheat in oven or microwave.
