🍏 Moist Apple Crumble Coffee Cake

📝 Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ½ tsp nutmeg (optional)
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup sour cream (or plain Greek yogurt)
  • 2 cups peeled and chopped apples (Granny Smith or Honeycrisp)

For the Crumble Topping:

  • ½ cup all-purpose flour
  • ⅓ cup brown sugar
  • ½ tsp cinnamon
  • ¼ cup cold unsalted butter, cut into cubes

Optional Glaze:

  • ½ cup powdered sugar
  • 1–2 tbsp milk
  • Dash of vanilla extract

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×9″ baking dish or line with parchment paper.
  2. In a medium bowl, mix crumble ingredients using a pastry cutter or fork until crumbly. Chill in fridge while you prepare the cake.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, cream butter and sugars until fluffy. Add eggs one at a time, then mix in vanilla.
  5. Mix in the sour cream, then slowly add dry ingredients until just combined. Fold in chopped apples.
  6. Pour batter into prepared pan and spread evenly. Sprinkle crumble topping generously over the batter.
  7. Bake 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool completely. Drizzle with optional glaze if desired.

  • Don’t overmix the batter—this keeps the cake soft and tender.
  • Use tart apples for balance if you prefer less sweetness.
