🍍 Pineapple Casserole Recipe

This Pineapple Casserole is a sweet and savory Southern side dish made with juicy pineapple, sharp cheddar cheese, and a buttery Ritz cracker topping. It’s perfect for holidays, potlucks, or as a surprising side with baked ham!


🍍 Pineapple Casserole Recipe

📝 Ingredients:

  • 2 cans (20 oz each) pineapple chunks, drained (reserve ¼ cup juice)
  • ¾ cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1½ cups sharp cheddar cheese, shredded
  • 1 sleeve Ritz crackers (~30 crackers), crushed
  • ½ cup unsalted butter, melted

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8×8 or similar-sized baking dish.
  2. In a large bowl, mix flour and sugar. Add the reserved ¼ cup pineapple juice, then stir in pineapple chunks and shredded cheese. Mix well.
  3. Pour the mixture into the prepared baking dish.
  4. In a separate bowl, combine crushed Ritz crackers with melted butter. Stir until evenly coated.
  5. Sprinkle the cracker topping evenly over the pineapple mixture.
  6. Bake for 30–35 minutes, or until golden and bubbly.

✅ Tips:

  • Use fresh pineapple if preferred — just be sure it’s chopped and well-drained.
  • For extra crunch, stir a few chopped pecans into the cracker topping.
  • Serve warm as a side dish, not a dessert — it’s great with ham, turkey, or barbecue!

🧊 Storage:

  • Store leftovers in the fridge for up to 4 days.
  • Reheat in the oven at 300°F or in the microwave until warmed through.
