For the Cake:
- 1 box yellow cake mix
- 1 (3.4 oz) box instant lemon pudding mix
- 4 large eggs
- 1 cup water
- 1/3 cup vegetable oil
- Juice & zest of 1 lemon
For the Glaze:
- 2 cups powdered sugar
- 2–3 tbsp fresh lemon juice
- 1 tbsp lemon zest (optional for extra zing!)

- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, combine cake mix, lemon pudding mix, eggs, water, oil, lemon juice, and zest. Mix well until smooth.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 40–45 minutes or until a toothpick inserted comes out clean.
- While the cake bakes, whisk together glaze ingredients until smooth.
- When the cake is done and still warm, poke holes all over the top with a fork or skewer and pour glaze over.
- Let the glaze soak in and cool before slicing. Enjoy!
