This lemon cake is ultra-moist, packed with fresh lemon flavor, and topped with a silky lemon glaze. It’s incredibly simple and absolutely irresistible!


πŸ“ Ingredients

For the Cake:

  • 1 box yellow cake mix
  • 1 (3.4 oz) box instant lemon pudding mix
  • 4 large eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • Juice & zest of 1 lemon

For the Glaze:

  • 2 cups powdered sugar
  • 2–3 tbsp fresh lemon juice
  • 1 tbsp lemon zest (optional for extra zing!)

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9Γ—13-inch baking pan.
  2. In a large bowl, combine cake mix, lemon pudding mix, eggs, water, oil, lemon juice, and zest. Mix well until smooth.
  3. Pour the batter into the prepared pan and spread evenly.
  4. Bake for 40–45 minutes or until a toothpick inserted comes out clean.
  5. While the cake bakes, whisk together glaze ingredients until smooth.
  6. When the cake is done and still warm, poke holes all over the top with a fork or skewer and pour glaze over.
  7. Let the glaze soak in and cool before slicing. Enjoy!
