📝 Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce
  • 2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
  • 1 cup potatoes, diced small
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper, to taste
  • Optional: a dash of hot sauce or Worcestershire sauce for extra flavor

🔥 Directions

  1. In a large pot or Dutch oven, brown ground beef over medium heat. Drain any excess grease.
  2. Add diced onion and garlic, and sauté until fragrant (about 2–3 minutes).
  3. Stir in broth, diced tomatoes, tomato sauce, potatoes, and seasonings. Bring to a gentle boil.
  4. Reduce heat and simmer for 15–20 minutes, or until potatoes begin to soften.
  5. Add frozen vegetables, stir, and cook for another 10–15 minutes, or until everything is tender.
  6. Taste and adjust seasoning. Serve hot with crusty bread or cornbread!
