🌽 Jiffy Cornbread Casserole

This Jiffy Cornbread Casserole is a classic comfort food side dish that’s creamy, slightly sweet, and incredibly easy to make with just a few pantry staples. Perfect for holidays, potlucks, or a weeknight dinner!


🌽 Jiffy Cornbread Casserole

Cook Time: 45–50 minutes
Total Time: ~1 hour

📝 Ingredients:

  • 1 (8.5 oz) box Jiffy corn muffin mix
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can creamed corn
  • 1 cup sour cream
  • ½ cup (1 stick) unsalted butter, melted
  • Optional: 1 cup shredded cheddar cheese

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch or 9×13-inch baking dish, depending on how thick you want the casserole.
  2. In a large bowl, mix together the corn muffin mix, whole corn, creamed corn, sour cream, and melted butter until just combined.
  3. Fold in cheese if using.
  4. Pour mixture into the prepared baking dish and spread evenly.
  5. Bake for 45–50 minutes, or until golden brown and set in the center.
  6. Let rest for 5–10 minutes before serving.

✅ Tips:

  • Add jalapeños, green chiles, or bacon bits for extra flavor.
  • Use Greek yogurt in place of sour cream for a lighter version.
  • Perfect alongside BBQ, chili, or roasted meats.

🧊 Storage:

  • Store leftovers covered in the fridge for up to 4 days.
  • Reheat in the oven or microwave.
