📝 Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 bag tortilla chips (about 6 oz), slightly crushed
- Optional toppings: chopped tomatoes, green onions, jalapeños, guacamole
👩🍳 Directions:
- Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
- In a skillet, cook the ground beef over medium heat until no longer pink. Drain excess fat.
- Stir in taco seasoning and Rotel. Simmer for 5 minutes.
- Add black beans and corn. Mix well and remove from heat.
- Layer half the crushed tortilla chips in the baking dish.
- Spread the beef mixture evenly over the chips.
- Dollop sour cream across the top and spread gently.
- Sprinkle shredded cheese over everything, then add the remaining crushed chips.
- Bake uncovered for 20–25 minutes or until bubbly and golden on top.
- Garnish with optional toppings and serve warm.
