Here’s a crowd-pleasing weeknight dinner that brings together the best of both worlds — tacos and lasagna! 🌮❤️🍽️


🌮 Easy Taco Lasagna

🍽️ Servings: 6–8

📌 Family Favorite | One Dish | Cheesy & Satisfying


📝 Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • ½ cup water
  • 1 (10 oz) can Rotel (diced tomatoes & green chilies), drained
  • 1 (16 oz) can refried beans
  • 8–10 small flour tortillas
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: sour cream, chopped cilantro, jalapeños, black olives, green onions

🔥 Directions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook beef:
    In a skillet over medium heat, brown ground beef. Drain excess grease. Stir in taco seasoning, water, and Rotel. Simmer for 5 minutes.
  3. Layer it up:
    • Spread a small amount of beef mixture on the bottom of the dish.
    • Add a layer of tortillas (cut to fit if needed).
    • Spread with refried beans, then beef mixture, then sprinkle cheese.
    • Repeat layers, ending with cheese on top.
  4. Bake:
    Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes or until bubbly and golden.
  5. Serve:
    Let rest for 5–10 minutes before slicing. Top as desired!

✅ Tips & Notes:

  • Swap tortillas for corn tortillas if preferred.
  • Add a layer of corn or black beans for extra texture and flavor.
  • Want it spicy? Mix in chipotle peppers or hot Rotel.

❄️ Storage & Freezing:

  • Fridge: Store leftovers in an airtight container for up to 4 days.
  • Freeze: Cool completely, wrap tightly, and freeze up to 2 months. Thaw in fridge before reheating.
