📝 Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning
- ½ cup water
- 1 (10 oz) can Rotel (diced tomatoes & green chilies), drained
- 1 (16 oz) can refried beans
- 8–10 small flour tortillas
- 2 cups shredded Mexican blend cheese
- Optional toppings: sour cream, chopped cilantro, jalapeños, black olives, green onions
🔥 Directions:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook beef:
In a skillet over medium heat, brown ground beef. Drain excess grease. Stir in taco seasoning, water, and Rotel. Simmer for 5 minutes. - Layer it up:
- Spread a small amount of beef mixture on the bottom of the dish.
- Add a layer of tortillas (cut to fit if needed).
- Spread with refried beans, then beef mixture, then sprinkle cheese.
- Repeat layers, ending with cheese on top.
- Bake:
Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes or until bubbly and golden. - Serve:
Let rest for 5–10 minutes before slicing. Top as desired!
