- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (10 oz) can enchilada sauce (red or green)

- ½ teaspoon cumin
- Salt & pepper, to taste
- 8–10 corn tortillas, cut in halves or quarters
- 2 cups shredded Mexican cheese blend
- Fresh cilantro, for garnish (optional)

- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook the beef mixture:
In a skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
Add garlic, chili powder, cumin, salt, and pepper. Stir in beans, corn (if using), and half of the enchilada sauce. Simmer 2–3 minutes. - Layer the casserole:
- Spread a thin layer of enchilada sauce on the bottom of the baking dish.
- Add a layer of tortillas, followed by a portion of the beef mixture and a sprinkle of cheese.
